14 Grain Bread

In Bosch bowl with dough hook add:
6 c. water
1 c. sunflower seeds
1/3 c. sesame seeds
1/2 c. vital gluten
1/3 c. amaranth
3 Tbsp. yeast
3 c. whole wheat flour
2 c. 9-grain cereal (raw)
1/3 c. millet
1/3 c. flax seed
1/3 c. canola oil
1/2 c. honey
3 Tbsp. dough enhancer
Mix all ingredients. Let sponge 10-15 minutes. Then add:
2 Tbsp. salt
3 c. kamut flour
3 c. spelt flour
whole wheat flour to clean sides of bowl
Knead 10 minutes on speed 1. Shape into 8 1-pound loaves or 4-5 large loaves. Let stand till double. Bake at 350 for 30-35 minutes.
