Lemon Bars.

**LEMON BARS**

2 c. Flour

1/2 c. Powdered Sugar

1 c. Butter

4 Eggs

2 c. Sugar

1/3 c. Lemon Juice

1/4 c. Flour

1/2 tsp. Baking Powder

  1. Preheat oven to 350 degrees. Spray 9" by 13" pan with cooking spray.
  2. In mixing bowl, combine 2 cups flour and powdered sugar.
  3. Cut in butter with pastry blender. Press into prepared pan. Bake 20 minutes or until slightly browned.
  4. Beat eggs. Add sugar, lemon juice, 1/4 c. flour and baking powder. Mix well and pour over crust.
  5. Bake for 25 minutes longer. Cool.
  6. Sift powdered sugar over top.

Makes 2 dozen.

For best results, allow to set until thoroughly cool before cutting into squares.

We made this for dessert last night and it was Fantastic! We are still enjoying them! They turned out a little darker than we would have liked but it didn't matter, they were still delicious!
